One of Seattle’s best cocktail bars is opening another location on the Eastside.

Ballard hotspot Sabine will open in Bellevue early next year. Seattle-based Yes Parade Restaurant Group — it operates seven restaurants throughout the Puget Sound region, including Sabine — says Sabine Café Bellevue will open in The Eight, a 25-story office tower. The 3,000-square-foot restaurant will be located on the ground floor and will have 50 seats for indoor dining, as well as outdoor seating on the plaza.

The new location is Yes Parade’s first on the Eastside.

Sabien opened in Ballard in 2020 and quickly established itself as one of the city’s go-to cocktail bars. Last year, it expanded its all-day café to flow into its Mediterranean-inspired dinner and cocktail menus.

Sabine’s menu is crafted by Executive Chef and operating partner Jacob Dunkelberger, who creates Mediterranean and Middle Eastern cuisine with a Pacific Northwest influence.

Yes also operates Bavarian bier hall Rhein Haus in Seattle, Leavenworth and Denver; Mexican eatery Poquitos in Seattle and Bothell; MacLeod’s Fish & Chips, a Scottish pub in Ballard; Stadium Golf in Tacoma; and Wally’s Wisconsin Tavern in Denver.
