HYATT REGENCY BELLEVUE WELCOMES NEW EXECUTIVE CHEF

James Beard-recognized Chef John Pivar brings more than 30 years of experience to

 the Eastside hotel’s culinary team

 

BELLEVUE, Wash. (April 7, 2017) – Hyatt Regency Bellevue is pleased to announce the appointment of John Pivar as the new executive chef, bringing more than thirty years of professional cooking and kitchen management experience to the hotel, which is located on Seattle’s Eastside. In his role, Pivar oversees all aspects of the hotel’s culinary program, including room service, catering and operations at Eques, which serves breakfast and brunch featuring high-quality, locally-sourced seasonal ingredients.

 

Pivar developed a passion for food at a young age while watching his grandmother bake fresh pastries and breads, then launched his culinary arts career in his hometown of Chicago. From there, his passion for cooking took him all over the country and beyond, including the Renaissance Vinoy Resort, St. Petersburg, Fla.; Sanibel Harbor Resort, Fort Myers, Fla.; and Scottsdale Princess Resort, Scottsdale, Ariz. – all AAA four-star diamond resorts – Hyatt Regency Curacao Golf Resort, Curacao, Caribbean; Hyatt Regency Indianapolis, Indianapolis, Ind.; and most recently Hyatt Regency Lost Pines, Bastrop, Texas, where he reconcepted the nine seasonal and year-round dining outlets and forged partnerships with local vendors and farms.

 

“My style of cooking is simple, yet elegant,” said Pivar. “I truly believe in the importance of respecting the products you use, and even more importantly, finding and highlighting products that are native to the region. I am looking forward to being inspired by and discovering all the amazing ingredients available in my new home in the Pacific Northwest, and can’t wait to get to know the farmers, vendors and partners who make all these quality ingredients possible.”

Pivar authored two books, “Fire It Up: Grill with Flavor, Flair & Fun” and “Taste the Vinoy: Without Reservations,” and was recognized by the James Beard Foundation Dinner’s “Best Hotels Chefs of America” series. When he’s not experimenting with a new dish or brainstorming book ideas, Pivar can be found hiking, gardening, riding his motorcycle or spending time with his wife and daughter.
